Recipe!! Vegetable Tian

I know I just posted a recipe recently, but I was so proud of what I made yesterday that I just had to post again!  Unfortunately, because I wasn't planning on posting this, I have no step-by-step photos.  On the other hand, the recipe is super easy, so they aren't really necessary.  And just look at how pretty it is when it's done!

Vegetable Tian

Ingredients
1 Sweet Potato
1 Yellow Squash
1 Zucchini
1 Tomato
1 Onion
4 Cloves of Garlic, chopped fine
3 Tablespoons Olive Oil
8 Leaves Fresh Basil
4 Ounces of Reduced Fat Cheese, grated

Directions
Preheat your oven to 375.  Peel the sweet potato.  Cut the sweet potato, squash, zucchini, and tomato into thin circles.  Slice the onion into thin pieces.  Heat a pan over medium heat and place 1 tablespoon into the pan.  Slowly cook the onions with the garlic until they just begin to caramelize.  Add salt and pepper to taste.  In a round dish (traditionally, an earthenware dish is used, but I just used a round cake pan), spray with cooking spray and spread the onions in an even layer on the bottom of the pan.  Arrange the vegetables around the dish and drizzle with 2 tablespoons of olive oil.    Sprinkle with salt and pepper to taste.  Cut the basil into thin ribbons and sprinkle on top of the dish.  Finally, evenly spread the grated cheese over top.

Put aluminum foil over the top of the dish and bake in the oven for 30 minutes.  Remove the aluminum foil, and continue baking until the cheese is completely melted and bubbly, approximately 15-20 minutes.  Serve warm and enjoy!  :)
